Trying to climb the learning curve - Help Sorting Files

Switch is quite impressive, but so is it's learning curve. For the things that we need to do, I've yet to find a good source of examples, so I have to post here.
We receive folders of images - each image has a particular SKU as the prefix on the title that dictates what options that printed piece has. The enclosing folder's name is the order number. I need to separate the images with different SKUs to be processed different with a custom script we already have running. The key is that when these get separated, they still need to be within an enclosing folder with the same order number as name.
I'm guessing I'll use ungroup method, but there's no documentation on how to sort based on anything really.
Also, is there ANY better documentation than the descriptive help files? These tell what things are, but not really how to use them.
